Our Story

Maple and Marble was born out of a desire to revolutionise New Zealand’s dairy farming practices by addressing a significant issue, which is the underutilisation of bobby calves.

Typically seen as a waste product in dairy farming, we’ve transformed these calves into high-end beef cattle with our exceptional Speckle Park genetics and innovative practices, ensuring they live full, minimal stress lives on the 3rd generation Southland Farm of Scotty and Jeannie Cochrane.

Our journey began with a vision to make a positive impact on the meat industry and the environment.

We are a group of mates with a passion for the beef industry, supported by our young families, taking our product to New Zealand’s high-end domestic market and exciting international customers.

Our Southland farm provides ideal conditions for raising Speckle Park cattle, a breed renowned for its exceptional marbling, tenderness, and flavour.

Our values of Minimal Stress, 100% Traceability and Full Utilisation lead comfortably into our 4th Value of Exceptional Quality.

Two Model Supply Chain

Our purebred program (Platinum Label) uses our high-end genetics to breed and raise purebred Speckle Park beef animals.

Our second model (Gold Label) applies these same high-end Speckle Park genetics across Friesian dairy cows, creating magnificent Speckle Park cross calves.

With low birth weights, our heifers and cows fare well through calving, supporting our animal welfare ethos. These hardy calves have exceptional vigour and high growth rates, leading to an extremely high-end beef product.

Our online shop allows consumers to purchase our beef products, offering quarter beasts to maximise utilisation of the entire animal. On occasion we provide individual prime cuts through our online store, along with our Maple and Marble biltong, and our beef brisket bacon that you will soon find in stores around NZ.

Looking ahead, we see a bright future for Maple and Marble.

What started as a conversation over a few beers has evolved into a product, now reaching the other side of the world and being served in some of New Zealand’s most high-end restaurants. We are proud of our product and our business model, built on sustainable farming practices, animal welfare, and full animal utilisation from the very beginning.
